Crunchy Oven French Toast Egg Bake Peanut Butter & Banana Burritos Spinach & Egg Scramble Whole Wheat Buttermilk Pancakes
Whole Wheat-Buttermilk Pancakes
- 1 cup whole wheat flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 Tbs. sugar
- 1 cup buttermilk
- 2 Tbs. oil
- 2 eggs
Mix together dry ingredients. Beat together last three ingredients. Add to dry ingredients and mix well. Bake on slightly oiled hot griddle. Serves 4 Back to top
Crunchy Oven French Toast (From the cookbook "Betty Crocker's Healthy New Choices") If you love the flavor of 100 percent pure maple syrup, use it in place of the honey.
- 2 Tbs. margarine
- 5 Tbs. wheat germ
- 1/4 cup orange juice
- 2 Tbs. honey
- 3/4 cup fat-free cholesterol-free egg product or 6 egg whites
- 12 slices French bread, each 1 inch thick
Heat oven to 450 degrees. Melt margarine in jelly roll pan, 15 1/2 x 10 1/2 x 1 inch, in oven; spread evenly in pan. Sprinkle 3 tablespoons of the wheat germ evenly over margarine. Beat orange juice, honey and egg product with hand beater until foamy. Soak each side of bread in egg mixture for 5 minutes. Drizzle any remaining egg mixture over bread. Sprinkle remaining 2 tablespoons wheat germ evenly over bread. Bake about 10 minutes or until bottoms are golden brown; turn. Bake 6-8 minutes longer or until bottoms are golden brown. Back to top
Egg Bake (Submitted by Missy Pegel)
- 8 oz. crescent roll (Pillsbury)
- 2 cups shredded cheddar cheese
- 5 cut up Prosage Links
- 4 beaten eggs
- 3/4 cup milk
Spray 9x13 pan. Spread crescent roll on bottom, then sprinkle with cheese and links. Mix milk and eggs, then cover up cheese mixture. Bake uncovered 400 degrees 15-20 minutes. Back to top
Peanut Butter & Banana Burritos
- 1 Tbs. margarine
- 4 bananas, sliced
- 4 medium flour tortillas
- 4 Tbs. peanut butter
- cinnamon
- sugar or other sweetener (optional)
In a medium skillet on medium heat, melt the margarine. Add bananas, cinnamon, and sweetener if using. Stir well, and cook for about five minutes, stirring occasionally. Meanwhile, prepare the tortillas: Warm the tortillas briefly in the microwave to make them pliable, then spread about 1 Tbs. peanut butter on each tortilla. Divide the cooked banana equally onto the four tortillas. Seal the burritos on both ends and place in a heated skillet, about a minute per side. This melts the peanut butter and also seals the tortillas. These burritos are excellent for breakfast or for a snack. Serves 4 Back to top
Spinach & Egg Scramble
- 3 Tbs. oil
- 1 onion, chopped
- vegeburger
- 1 lb. spinach, blanched, drained and chopped
- salt
- Tabasco sauce
- 4 eggs, lightly beaten
- 4 Tbs. Parmesan cheese, grated
Heat the oil in a large skillet. Add the onion, and saute over medium heat until soft. Add the burger until cooked and browned. Add the spinach, and mix well. Cook, stirring for 3-4 minutes. Add salt to taste. Mix the Tabasco with the eggs. Remove from heat, transfer to a warm platter and sprinkle with Parmesan. Serves 6 Back to top
