Valentino's Pizza Crust
Whole Wheat Banana Muffins

 

Bean And Chili Bread

  • 3-3 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 tsp. chili powder
  • 1 Tbs. dried onion flakes
  • 3 Tbs. sugar
  • 1 tsp. salt
  • 1 pkg. Active Dry Yeast or Quick Rise Yeast
  • 2 Tbs. canola oil
  • 1 cup fat-free refried beans
  • 3/4 cup water
  • 1 egg white
  • 1 Tbs. water

In large mixing bowl, combine 1 cup flour, cornmeal, chili powder, onion flakes, sugar, salt and yeast.  Heat oil, refried beans and water to 120-130 degrees.  Add to flour mixture; beat with electric mixer 3 minutes on medium speed.  By hand, stir in remaining flour to make a firm dough.  Turn out onto a floured surface; knead until smooth and elastic about 5-7 minutes.  Place in greased bowl, turning to grease top.  Cover; let rise in warm place about 1hour (30 minutes for quick rise). 

Punch dough down.  On lightly floured surface, roll dough into a 7x15 inch rectangle.  Starting with shorter side, roll up tightly pressing dough into roll with each turn.  Pinch edges and ends to seal.  Place in greased 9x5 inch loaf pan.  Cover; let rise until double, about 45 minutes (30 minutes for quick rise).  Brush top of loaf with mixture of egg white and water.  Sprinkle generously with dried onion flakes.  Bake in preheated 375 degree oven for 20-25 minutes or until loaf sounds hollow when tapped.  Remove from pan and cool.  Yields one loaf.

  • 1 cup warm water
  • 1 Tbs. white sugar
  • 2 1/4 tsp. active dry yeast
  • 3 Tbs. olive oil
  • 1 tsp. salt
  • 2 1/2 cups all-purpose flour

Stir water, sugar and yeast together until dissolved.  Add the olive oil and the salt.  Stir in the flour until well blended.  Let dough rest for 10 minutes.  Pat dough into pan or on to a pizza stone using fingers dipped in olive oil.  If desired, sprinkle basil, thyme or other seasoning on crust.  Top with your favorite pizza topping and bake for 15-20 minutes in a preheated 425 degree oven.

Whole Wheat Banana Muffins (From the cookbook, " Bountiful Blessings")

  • 3 extra ripe bananas
  • 1/3 cup oil
  • 1/2 cup honey
  • 2 eggs, beaten
  • 1 3/4 cups whole wheat flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1/4 cup hot water
  • 1/2 cup nuts or raisons, or both (optional)

Beat oil, honey, bananas, and eggs; add water.  Mix in dry ingredients.  Bake at 350 degrees for 20 minutes or until done.  Use cupcake liners to avoid extra clean-up!
